Risotto di Zucca (2)
- put onion, garlic, pumpkin and porcini mushrooms (or pancetta, or blue cheese) and cook until the pumpkin is tender;
- add rice and water (water is double the volume of the rice);
- add salt, pepper, sage leaves and parmesan cheese;
- add Saint-Marcellin cheese (or similar) and let it melt;
- cook until rice is ready and let rest for a few minutes before serving.
